The essence of lemon is obtained by a long maceration of the juice, pulps and a very small part of peels. The result of its maceration and its low alcoholic degree give a pleasant aperitif within the reach of great experts as well as the uninitiated.
For more than a century, the monks of the abbey have been cultivating the ancestral know-how of master liquorists. They make several liqueurs including the famous Lerincello made with organic lemons from Menton.
The Lérincello is eaten very iced. It is perfect in the preparation of desserts and cocktails."
