The cuvée Sainte Ombeline comes from a plantation of Chardonnay protected by a fence. This allows to protect the grapes from the attack of the surrounding sea salt. This is why this cuvée is produced with 100% native yeasts. It is the perfect expression of the terroir of St Honorat!
Adorned with a sustained golden yellow color, the Saint Ombeline 2019 cuvée invites you to taste it. The first smell is a pleasure of refinement and delicacy. Citrus fruits and broom flowers mingle with notes of toasted bread and bourbon vanilla.
Carried to the lips, the attack is silky and smooth supported by a beautiful acidity. The racy nectar can reveal all its chiseled aromatic. A delicate bouquet of citrus fruits, fresh flowers, minerality enhanced by notes of toasted almonds.
